BDH Catering Inc., established in the summer of 2003, was created to provide innovative menus, nutritional analysis, and exemplary customer service for your school lunch programs. After a decade of serving our customers well, we continue to look for opportunities to improve and create.

The founder and CEO of BDH, Jody DeVee, has been in the food service industry for 30 years. After managing some of Detroit's premiere restaurants, DeVee started BDH Catering Inc. because he wanted to bring excellent food and outstanding service with a focus on affordable options to schools.

  OUR PHILOSOPHY

At BDH Catering Inc., we support our local farmers by using their seasonal produce. Therefore, our clients are provided with the best quality ingredients in all our dishes.

BDH is committed to providing scratch-made, healthy, and delicious food for you school's lunch program. With a full catalog of proven recipes and innovative ideas, BDH offers selections such as hormone-free, free-range grilled chicken; petit meatloaf cups; made-from-scratch Pad Thai; and chicken shawarma, just to name a few. Brown rice and whole-grain breads and pastas are also featured daily.

Main entrees that meet various dietary needs are also our specialty. Delicious vegetarian selections such as whole-grain pasta primavera; grilled eggplant focaccia sandwiches; and spinach & feta quiche are some of our more popular offerings. We also have a number of gluten-free and lactose-free options.

To augment all of our entrees, we make, from scratch, a wide variety of soups: New England Clam Chowder; Chili; Butternut Squash; Beef Barley; and many others.

If your school is looking for more options, we can create a sandwich station that features whole- and multi-grain breads; an assortment of cold-cuts; the best produce available; made-from-scratch chicken and tuna salads; and freshly made hummus.

Upon request, we are able to offer nutritional analyses for all of our recipes.

In addition to running school lunch programs, BDH Catering Inc. caters private functions. We have catered everything from an elegant buffet at special events to outdoor barbeques for fun, summer gatherings.

This is the type of email that I often forget to send. I want to tell you that, in my estimation, Jody and the entire Middle School kitchen staff have gone above and beyond my expectations and have earned my deepest appreciation. Matthew has a recent diagnosis that requires dietary restrictions. Dana met with Jody once we received this news, and his quick and knowledgeable response has been completely reassuring. The dinner and lecture went really well yesterday. Everyone who came was really impressed and very pleased. Thank you so much for your help in making it run smoothly and look (and taste!) so good. I am especially appreciative that you were each gracious, helpful, understanding and kind as I figured out what I was doing and what was needed.

When I worked at Citibank years ago, you could nominate a coworker for a CitiStar, which was a nice honor. I would nominate Jody for a Citistar if we had such a thing here. And, I would say the same for the whole group at the middle school

Just wanted to thank you and your staff for a wonderful job with 8th Grade Class Day. Many of the students told me how much their enjoyed their meal. The staff did a fantastic job with set up, serving and take down. They are all so friendly and helpful, it really made my job so easy!

It is said in this life there are only two things you can count on: death and taxes. I would add to that short list BDH catering.

  FEATURE RECIPE

Ingredients - makes 9 Servings
1 cup Guinness
16 ounces Semisweet or Bittersweet Chocolate; Chopped, Divided
2 1/4 sticks Unsalted butter
1 1/2 cups Sugar
3 large Eggs
1 teaspoon Vanilla extract
3/4 cups All purpose flour
1 1/2 teaspoons Kosher Salt; Divided
Preparation

1.Preheat oven to 350°. Line a 9x9x2" metal baking pan with foil, leaving a 2" overhang. Bring stout to a boil in a medium sauce- pan; cook until reduced to 1/2 cup, about 12 minutes. Let cool. Reserve 1/4 cup stout.

2. Stir 12 oz. chocolate and 1 cup butter in a medium metal bowl set over a saucepan of simmering water until melted and smooth.

3. Whisk sugar, eggs, and vanilla in a large bowl to blend. Gradually whisk in chocolate mixture, then 1/4 cup stout from pan. Fold in flour and 1 1/4 tsp. salt. Pour batter into prepared pan.

4. Bake brownies until surface begins to crack and a tester inserted into center comes out with a few moist crumbs attached, 35–40 minutes. Transfer pan to a wire rack and let cool for at least 20 minutes. Stir remaining 4 oz. chocolate in a medium metal bowl set over a sauce-pan of simmering water until melted and smooth. Add reserved 1/4 cup reduced stout, remaining 2 Tbsp. butter, and 1/4 tsp. salt; whisk until well blended.

5. Pour warm glaze over brownies. Let stand at room temperature until glaze is set, about 40 minutes.Using foil overhang, lift brownie from pan; cut into squares.
